
Happy Friday friends! This post is a bit out of the norm for me but if you followed along during our Bahamas living this summer, you may have seen us eating lots of fresh, farmer’s market salads! The fruits and veggies on the island are all grown by local farmers and we were running over to the nearest market every week to get fresh lettuce for our salads at the beach house.
Being that we were there for two whole months, this really got us in the habit of eating more greens, and I’m happy to report that we are still going strong! Early this week I put together this energy boosting, nutrient heavy, chicken salad, and I thought it’d be fun to share it with you all.
Eating healthy is such a tough habit to get into and it also takes learning! We have slowly started to change the way we buy groceries this year and I’m starting to see a huge change in our health and overall wellbeing. If this is something that you guys find interesting, I will keep sharing our healthy meals here on the blog! Now, to get to the salad!

Gluten Free Crispy Chicken House Salad Recipe
What you’ll need:
- HEB Gluten Free Chicken Nuggets or Strips (soooo good!)
- Romain Lettuce
- Spinach Leaves
- Organic Cherry Tomatoes
- Mini Orange Sweet Peppers
- Feta Cheese
- Broccoli
- Avocado Slices
- Green Olives
Add or Omit whatever you’d like! I used HEB Organics Italian Salad Dressing to top it off! It tastes like Olive Garden’s dressing to me so I love it!
